1 cup unsweetened vanilla almond milk
1/2 cup oil (vegetable or olive is fine)
1 cup sugar
2 eggs or 1 banana mashed and an extra 1/2 tsp of baking powder
1 3/4 cups gluten free flour
1 tsp baking powder
1 cup of fresh blueberries
Whisk the oil, milk, sugar, and eggs (or banana) and preheat your waffle iron.
add the flour and the baking powder and mix until just combined and smooth, then add the blueberries.
make sure you spray your waffle iron really well, these stick like crazy!
Use about a half a cup of batter per waffle and let cook for about 3 minutes, or until golden brown.
top with powdered sugar, REAL maple syrup, sliced berries, whatever floats your boat!
