Coconut Kiwi Popsicles
1 can coconut milk (normal 16 oz can)
3 kiwis, sliced
3/4 cup vanilla almond milk (or whatever you have in the fridge)
2 tbsp chia seeds
1/2 tbsp agave syrup
in a large bowl, mix the coconut milk, almond milk, chia seeds, and agave and let set for about a half hour to let the chia seeds set.
Slice the kiwis and place those in the popsicle molds, if you press them against the sides they should stick pretty well so they look pretty when you take them out.
Pour the chia "pudding" into the molds and freeze them for about 4 hours. If you aren't using a mold like mine where the sticks are in a fixed place, I would wait about an hour before putting them in so that way they have a bit of support and stay up straight.
When you're ready to eat, run the popsicles in the plastic molds under warm water so they come out whole and easily!
