It's been chaos in my house- packing and shopping for college has taken over! I leave Saturday, it's crazy how fast it's come up. I also want to apologize ahead of time if I'm not able to update next week, the transition to a dorm-friendly blog might take a little for me to get used to so I'm going to do my best!
So in the few minutes of down time I had today, I whipped up my favorite snack, hummus! We like to roast garlic ahead of time and freeze it so that when we need it for recipes we can just microwave it and use it. So I took my big can of chick peas and processed it with the garlic and some spices and it came out great! It takes maybe 10 minutes to make and when hummus is homemade, you'll never want to buy it again.
6 cloves pressed or roasted garlic
882 g can of chick peas (the really big can)
3-4 tablespoons olive oil
3 tsp salt
2 tsp onion powder
1 tsp red pepper flakes
Process all ingredients in a food processor, start with 2 tbs of olive oil and add more in as you see necessary.
Enjoy with crackers, carrot sticks, peppers, whatever you want!
