This is a better late than never recipe. I shipped these out to my boyfriend for Valentine's Day and even though they weren't super fresh I still got raving reviews! (Maybe he was just being nice:P)
They don't have a ton of sugar or anything crappy in them so they're pretty guilt free! And they're all chocolatey which is never a bad thing!
1 tbsp chocolate protein powder (or flour of choice)
1 tbsp cocoa powder
1 cup shredded unsweetened coconut
1/2 cup plus 2 tbsp milk of choice
4 tbsp agave syrup
Pinch of salt
Melted chocolate chips for dipping
Combine all ingredients in a tall fish except chocolate chips
In the microwave, heat two minutes, stir, then microwave another minute (or until firm)
Scoop into balls on a parchment paper lined baking sheet, I used an ice cream scooper for this.
Bake at 360° for 14-16 minutes. Let cool then remove from the tray. Melt the chocolate chips and dip the bottoms of the macaroons. Place on wax paper and freeze for about an hour to set. This makes about 12 cookies depending on how big of scoops you make.
