makes 8 burgers
1/3 cooked brown rice
1/3 cup olive oil
1 large onion
8 oz white button mushrooms (chopped)
8 oz baby bella mushrooms (chopped)
1 T finely chopped garlic
3 T soy sauce
1 cup edamame (shelled)
1/2 cup roughly chopped roasted salted cashews
3 T arrowroot
1 t sesame oil
1 large egg beaten
Cover the bottom of a large skillet with olive oil and heat it over medium low heat.
Add the onion and cook, until softened, about 10 minutes.
Turn up the heat to medium high and add the mushrooms and salt to taste. Cook for about 5 minutes until the mushrooms are browned.
Turn the heat down and add the garlic and cook until fragrant and then add the soy sauce until it's nearly evaporated.
Transfer all this to a food processor and add edamame, cashews, arrowroot, and sesame oil. Pulse until it is finely chopped.
Transfer the mixture to a large bowl with the rice and combine, mixing in the egg.
Chill for at least 30 minutes.
Portion the mixture into 8 balls and flatten into patties.
Heat the remaining oil and cook the burgers for about 3-4 minutes per side over medium low heat.
