For the burgers:
2 cups black beans (partially drained, but if you drain too much you can add water later if your burgers need it)
3 ears of corn
1 small onion
1 clove garlic
1 tsp chili powder
1 tsp smoked paprika
1 tsp cumin
3/4 cup breadcrumbs
salt to taste
For the curly fries and spicy mayo:
3 large potatoes
2 tbs olive oil
1 tbs garlic powder
salt and pepper
1/2 cup mayo
hot sauce to taste (some like it mild, some like it hot!)
For curly fries:
Using a veggie spiralizer, cut the potatoes into ribbons (cut them in half if needed). In a medium bowl, mix them with olive oil, garlic powder, and salt and pepper to taste. Spread them out over a baking sheet lined with parchment paper and bake for about 30 min at 450º, flipping over after 15 minutes.
For the spicy mayo:
Mix the mayo and hot sauce. Super easy.
For the burgers:
Saute the onion and garlic in a large skillet with olive oil until the onion is almost translucent. Then, add the corn cut off the cob and saute that for another 5-8 minutes.
In a medium/large bowl, mash the black beans with a potato masher, enough so that most of them are mashed but you still have a good amount of whole beans. Add in the spices and breadcrumbs and mix well.
Add the corn mixture to the beans and mix that well, making sure to mix the corn in well.
Form patties about 3-4 inches wide, this makes about 7 so you can change that if you want to make more sliders or fewer big patties.
Heat olive oil in the large skillet you used for the onions and fry the patties over medium heat, until crispy. If needed, you might want to use a spatula and something else like a wooden spoon to flip the patties over, they stuck together fairly well but it might help to avoid disaster!
