3 tablespoons olive oil
8 tablespoons Earth Balance dairy free buttery spread
4 oz can button mushrooms
1/2 red onion
3 tablespoons flour (substitute gluten free Cup for Cup if needed)
1 teaspoon pepper
1 teaspoon salt
1 and 1/2 cups vegetable broth
14.5 oz canned green beans
6 oz French fried onions
Preheat the oven to 350º
Heat the olive oil and buttery spread in a small pot on medium high until well mixed.
Mince the mushrooms and onions and add them to the small pot and heat until the mushrooms darken and shrink and the onions become translucent. Remove from the heat and add the flour and mix well.
Add the broth, salt and pepper to taste, and heat on medium high to reduce just a bit. If you need it to be thicker, let it sit for longer and add more flour.
Pour the mushroom sauce over the green beans in a small casserole dish. Put in the oven for 30 minutes. Sprinkle most of the french fried onions on top and bake for an additional 5-10 minutes. Sprinkle the rest of the french fried onions on top and serve warm!
